Recipe: Peanut Cranberry Muesli Bars

February and March are the most hectic months at my work, so having healthy snacks on hand is vital. I whipped up these peanut cranberry muesli bars on a sunny Sunday afternoon and was pretty popular come Monday mid-morning! Plus, they’re delicious!

Peanut Cranberry Muesli Bars | I Spy Plum Pie

Ingredients List

  • 5 cups rolled oats
  • 1/3 cup plain flour
  • ½ cup coconut
  • 2/3 cup crushed peanuts
  • ½ cup pumpkin seeds
  • ½ cup dried cranberries
  • ½ cup coconut oil
  • ½ cup peanut butter
  • ½ cup honey or rice malt syrup
  • Pinch salt
  • 1/2tsp cinnamon
  • 2/3 cup brown sugar
  • 1tsp vanilla essence
  • 1 cup puffed rice
  • ½ cup cacao nibs (or choc-chips)

Steps

  1. Preheat oven to 170 and line a baking tray with paper overhanging each end
  2. In a large bowl combine oats, flour, coconut, peanut, pumpkin seeds and cranberries
  3. In a small saucepan combine coconut oil, peanut butter and honey until melted and combined
  4. Add the salt, cinnamon, brown sugar and vanilla essence and stir until combined and the sugar has melted
  5. Pour over the oats mix and stir well to combine
  6. Add the puffed rice and cacao nibs and fold together
  7. Press firmly into the prepared pan and bake for 25-30 minutes, until golden on top
  8. Leave to cool completely in the pan, then cut into pieces

I love that these peanut cranberry muesli bars are packed with flavour without being too sweet. My favourite thing about homemade muesli bars is having complete control about what goes in them, and knowing there’s no weird additives either. You can also cut them in to any size that suits you – I went bite sized pieces this time so they’d go further round the office!

If you want to make these vegan friendly then opt for the rice malt syrup, but either works perfectly well. I’d also choose smooth peanut butter if you have it on hand, but I’m sure they’d still be delicious either way! You could even adapt these to be almond or cashew cranberry muesli bars if you’d prefer! Just switch out the nut butter and nuts and leave the rest exactly the same! Delicious!
