Recipe: Eggplant Chickpea Curry

Homemade curries are one of my go-to meals and I like to keep my freezer stocked with different curry options for nights when cooking is the last thing I feel like doing. This eggplant chickpea curry is one of my favourites, it’s deliciously creamy, full of flavour and mild enough for the whole family. Plus, it freezes really well!

Recipe: Rosemary & Parsley Cannellini Bean Dip

Another week, another dip here on I Spy Plum Pie! This one is a new favourite here at ISPP HQ as it works equally well served with crudités and crackers, or as a spread to make even the most simple sandwich a whole lot tastier! It makes a nice change from hummus as well! So here we go, my rosemary & parsley cannellini bean dip!

Why I Don’t Use Pod Coffee

As a Melburnian it’s probably no surprise that I’m a big fan of coffee, however there’s one form of coffee I have chosen not to use and that’s pod coffee. I know this might be a contentious opinion, and I can definitely understand the appeal of pod coffee – it’s cheaper than going to a cafe, better than instant coffee and much easier than fancy machines – but even all that isn’t enough for me! So today, I wanted to share with you why I don’t use pod coffee.

Recipe: Ricotta Stuffed Mini Capsicums

As you may have seen in my January Balcony Garden update I now have a mini capsicum plant which was getting rather laden with gorgeous orange peppers. There was really only one thing to do with them when they ripened – stuff them with cheese! I was even able to flavour them with herbs from my balcony and lemon from my parents, so it really is a homegrown affair! So here they are, my ricotta stuffed mini capsicums!

Water Saving Tips

I’ve talked energy saving tips on the blog a few times now, so I thought it was about time I talked water saving tips as well! Most of my childhood took place during the big drought in Victoria so I have strong memories of seeing the dam levels reported on the news each night and only being able to water the garden on certain days, and between certain hours. Even though the drought has now officially broken in Victoria it still makes excellent sense to save water as much as possible, both to help the planet and to save money!
