Recipe: Pumpkin, Chickpea Salad with a Lemon & Chilli Dressing

Even though winter has well and truly arrived in Melbourne I can’t seem to stop making up big batches of salad to take to work for my lunch. It’s possibly because the wait for the microwave is often rather long, but also just that I really do love salads! I love how they can be as simple or elaborate as you like, and the seemingly endless combination of dressings means that there’s no need to repeat flavours very often. It’s a nice way to also use winter vegetables other than just in roasts and soups, which is how they seem to be ending up for dinner! Anyway, enough rambling, on to today’s salad!

Recipe: Broccoli and Parmesan Soup

I’m a big fan of broccoli and would happily just eat a bowl of it steamed with some lemon juice and chilli, but this time I decided to try something a bit different and make a soup, as that’s all I seem to be eating! The addition of the parmesan adds a nice bite and the potato helps to make it creamier and denser. A big bowl of this served with some crusty bread made me a very happy camper!

Recipe: Udon Noodle Soup

But wait, there’s more soup! I decided to turn this week into a soup frenzy so I could share lots of different recipes as we head into the depths of winter. This one is something have been making a lot lately, it’s a simple and delicious way to warm up on a cold winter night and can include lots of different veggies so is a great way to use up whatever you have in the fridge. As an added bonus it takes very little time at all so you can have a tasty and nutritious meal ready in a flash – perfect!

Recipe: Nutty Raw Brownie

There are lots of recipes out there for raw brownies however when I went to make myself a batch I decided I needed to tweak things up to include some nuts at the end to give the brownie a bit of crunch. I’ve always been funny about texture in food – for a long time I didn’t eat avocado because I couldn’t stand the texture, and similarly I really like my food to have a combination of some smooth bits and some crunchy bits which is why I am always throwing nuts into salads, stir fries and the like. I really like how this turned out, it’s a good mix of ‘cake’ like texture with some delicious crunch thrown in. All that AND it’s raw, vegan, sugar free and healthy. It’s too good to be true (almost!).

Spotlight On: Original & Mineral

This is the third instalment of my series profiling brands I love that are doing great things with natural, planet friendly products. Today the focus is on Original & Mineral (or O&M as they seem to be known!) which is an Australian brand selling hair products that are all free of ammonia and other nasties, whilst still being salon quality. In fact, the brand started in an Australian salon and the products including dyes, shampoos, conditioners and styling products are used in salons across Australia. Luckily, they are also available for purchase to be used at home!
