A Sunday afternoon in the kitchen

One of my favourite ways to wind down on Sunday afternoons is to spend some time in the kitchen, cooking things to see me through the week at work and some sweet treats for my housemates as well. This weekend I was able to do just that, all whilst keeping an eye on the cricket scores!

I started with lamington cupcakes which I spotted on Ingrid’s blog http://www.inglossybeauty.com and she was lovely enough to take a photo of the recipe from the paper and email it through to me to try out. They were simple to make and there definitely weren’t any complaints from my housemates!

After that I decided I should make something a little more on the healthy side, so made a batch of muesli bars to see me through the work week. The recipe is based on one from Taste, but tweaked for my personal preferences!

Ingredients List

  • 50g butter
  • 3/4 cup honey
  • 1/4 cup brown sugar
  • 50g butter
  • 3 cups museli
  • 3/4 cup sultanas
  • 1/4 cup dates
  • 1/2 cups of nuts – I used pistachios & almonds (as that’s what I had)
  • 1 tsp ground cinnamon

Most of the ingredients are fairly interchangeable – if you prefer seeds or different fruits swap them in, just try and keep the proportions similar so it will stick together.

Steps

  1. Preheat oven to 180C and line a 19 x 29cm slice pan.
  2. Cook the honey, sugar and butter in a saucepan over medium heat, stirring for 5 minutes or until butter melts and sugar dissolves.
  3. Bring the syrup to the boil and cook for 2 minutes or until it thickens slightly. Take it off the heat
  4. Mix the muesli, fruit, nuts and cinnamon in a large bowl.
  5. Pour over the hot syrup and stir to combine.
  6. Spoon the mixture in to a pan and press it down gently.
  7. Bake in oven for 30 minutes or until golden brown and crisp. Remove from oven and set aside in the pan to cool completely.
  8. Enjoy!

    Wow they look great! Weren’t they delicious?:)

    The muesli bars look good too, so handy to have as an inbetween snack X
