Recipe: Roast Pumpkin Dip

If you’ve been around these parts for long it’ll come as no surprise that I’m a huge fan of both pumpkin and dips. In fact, the only surprise there is possibly that I haven’t already shared a recipe for a pumpkin dip! We’re coming towards the end of the pumpkin season here in the Southern Hemisphere, but as I’m seeing all our Northern neighbours celebrating the arrival of the vegetable I was very glad to get another pumpkin in my veggie box to play with. I have a big week of work ahead of me with lots of meetings and deadlines, so I knew having something healthy and delicious on hand that I could graze on whenever I got a chance would be vital, so whipped this up to help fuel my week.

Recipe: Asparagus and Haloumi Quinoa Salad

Now that asparagus is back in season I wanted to use it in a salad for my work lunches this week. I have been on a bit of a goats cheese kick lately but decided to pair it with another of my favourite cheeses – haloumi – in a fresh and delicious quinoa salad. It turned out really well and I found myself looking forward to lunch at work even more than usual – and that’s saying something!

How To: Flavoured Cucumber Water

I’ve been a big water drinker since I was a kid – we didn’t have much in the way of fizzy drinks or even cordial at home, it was always water with dinner and because I did a lot of singing when I was younger I got into the habit of carrying a water bottle around pretty early on. These days I keep a big bottle on my desk at work which I refill multiple times throughout the day, however I often find myself not drinking enough water on the weekend as I get busy and distracted, until I find myself with a headache!

Recipe: Chilli Tomato Sauce

I’ve discovered a strange quirk with my veggie boxes lately in that if I haven’t used up one particular vegetable it always shows up in large quantities in the next box as well, leaving me with a huge pile of something that needs to be used up quickly. It happens occasionally with tomatoes, but luckily they are easy to cook up in a big batch to make tomato sauce, which can be frozen to be used later. That’s what I did with this batch, and the best part is the sauce is really versatile. I like to keep it chunky for simple pastas and blend it up nice and smooth for pizza bases. I like mine with a good kick to it so use a whole chilli, seeds and all, but you can reduce the spice to your own taste.

Recipe: Asparagus, Leek & Goats Cheese Risotto

I’m so excited that it is finally asparagus season again in Australia! I was very happy to find some in my latest veggie box delivery, and I’m hopeful that they keep showing up as they are such a delicious vegetable and so easy to cook. I’m sure my mum must find it funny that I’m now so enraptured by asparagus as I definitely wasn’t always – but I guess that’s all part of growing up!
