How To: Making Vegetable Stock from Food Scraps

Vegetable stock is one of those things that it is really useful to have on hand, it can add delicious depth and flavour to a whole range of dishes, as well as being an integral parts of soups, risottos and other dishes. Making my own stock has always been high on my to-do list, but the idea of buying fresh veggies purely to turn them into stock then dispose of them just didn’t sit right. That was until I realised you can just as easily make vegetable stock out of your food scraps, making the whole thing practically free!

Recipe: Banana Caramel Cupcakes

Today’s post is a little bit special because, well, it’s my birthday! Yep, I’m turning the ripe old age of 27 today and what better way to celebrate than with cupcakes! Bringing cake on (or near) your birthday is mandatory at my work, not even the boss would get away with not bringing something to share, so I whipped up these bad boys to take in and pass around. They’ll have to wait until tomorrow though, I’m off to spend the day at the Peninsula Hot Springs with B instead (sorry work!)

Recipe: Pomegranate & Feta Lentil Salad

After making a couple of batches of my Pomegranate & Mint Iced Tea I decided it was time to use pomegranate in a salad again, and had my heart set on this lentil concoction. It almost wasn’t to be as all of a sudden I struggled to find pomegranates anywhere, but I refused to give up and after visiting five separate fruit & vege shops (which is no mean feat when you walk everywhere!) I finally got my hands on some more of the bright coloured beauties and could whip up this salad! Thankfully it was as delicious as I had hoped and it was definitely worth the effort to find the pomegranate!

Recipe: Crunchy Noodle Tofu Salad

This recipe was inspired by a crunchy noodle salad B and I had whilst at Golden Plains festival again this year. I had eaten it on a previous visit to the festival but there was something about it this time that really grabbed us both, cementing its place as our favourite meal of the festival (which is no mean feat, there’s some amazing food there!). When I got home I decided I needed to try my hand at making something similar, and I’m pretty chuffed with the results!

Recipe: Mango, Peanut & Lime Sauce

Sometimes I find myself getting in a bit of a rut with sauces and marinades, with the same thing ending up on meal after meal. This happened again recently so I decided it was time to try something new and after seeing mangos on special at my local fruit & vegetable shop I knew exactly what I wanted to make!
