Recipe: Banana Choc-Chip Quinoa Flake Biscuits

Woah, what a mouthful of a name for a biscuit! If you like I Spy Plum Pie on facebook (and if you don’t, maybe now is a good time to start?!) you might have seen these biscuits pop up last week, so I thought I should share the recipe! I bought some quinoa flakes for the first time a few weeks back and have been using them to make porridge in the morning as it’s just gotten too cold for my normal smoothies. I decided to try something different with the flakes and I had heard they make a good substitute for flour in biscuits and cakes, so took some inspiration from a bunch of recipes I came across and came up with these! They turned out pretty delicious too!

Baking for Allergies

Food allergies are something we seem to be becoming increasingly aware of, even if, like me, you are lucky enough not to have any. As someone that loves cooking, and particularly baking, for others I am often catering for people that do, so need to adjust my recipes accordingly. Obviously for egg and dairy allergies you can always seek out a vegan recipe, but sometimes it’s not easy to find one, or you want to adapt a recipe you already know, so I thought I would share some simple alternatives I have discovered over the years to make your baked goods allergy friendly.

Recipe: Pumpkin, Chickpea Salad with a Lemon & Chilli Dressing

Even though winter has well and truly arrived in Melbourne I can’t seem to stop making up big batches of salad to take to work for my lunch. It’s possibly because the wait for the microwave is often rather long, but also just that I really do love salads! I love how they can be as simple or elaborate as you like, and the seemingly endless combination of dressings means that there’s no need to repeat flavours very often. It’s a nice way to also use winter vegetables other than just in roasts and soups, which is how they seem to be ending up for dinner! Anyway, enough rambling, on to today’s salad!

Recipe: Broccoli and Parmesan Soup

I’m a big fan of broccoli and would happily just eat a bowl of it steamed with some lemon juice and chilli, but this time I decided to try something a bit different and make a soup, as that’s all I seem to be eating! The addition of the parmesan adds a nice bite and the potato helps to make it creamier and denser. A big bowl of this served with some crusty bread made me a very happy camper!
