After the success of my lentil bolognese I thought it was time to vegetarianise (that’s definitely not a word…) another classic with these meatless meatballs! Made with the goodness of mushrooms and packed with fresh herbs they may not quite have the texture of regular meatballs but they sure are tasty!
These deliciously eggy tarts are a variation on the Sundried Tomato & Feta ones I made back in January and are perfect for a grab & go breakfast, or as a light lunch when served with a side salad. This time they’re zucchini, pea & feta tarts instead!
Even after making (and eating!) my Lemon & Coconut Cake I found myself with still quite a few lemons to use up so decided I would expand my lemon baking repertoire from cakes and slices to include some cookies as well!

One of my work colleagues has a farm in country Victoria and every so often will arrive at the office with bags full of herbs or citrus for us to help ourselves to. The other day it was lemons and I happily helped myself to a rather large armful (or two!) of them to bring home with me.
