Recipe: Mediterranean Lentil Salad

With the crazy hot weather we had in Melbourne over the summer, being able to have hearty salads for dinner with some grilled tofu or haloumi became a must. Even spending too much time over the stove was too much, let alone turning on the oven! That’s where this salad came to the fore and it didn’t disappoint! The lentils provide bulk and protein and the fresh, crisp vegetables are deliciously refreshing. I kept it simple with some lemon juice and oil as the dressing, it really doesn’t need any more than that!

Recipe: Pomegranate & Mint Iced Tea

Even though we’ve finally had some respite in Melbourne from the crazy heat we’d experienced over summer, iced tea has remained a staple in my fridge. The citrus iced tea I shared a little while back has been on high rotation, but when I found myself with a rather ripe pomegranate in my fruit bowl I decided to mix things up and try a pomegranate based version instead! Even better, the mint came from my little balcony – it’s growing things already!

Recipe: Cashew and Cranberry Bliss Balls

I went through a stage quite some time back where I was experimenting with lots of different Bliss Ball varieties with traditional date & cacao balls, fig & goji bliss balls and apricot & almond balls all getting a run in my kitchen. I hadn’t made any in such a long time so when I was trying to think of a tasty snack to take to work I decided it was time to try a new flavour combination. I had a rather large supply of dried cranberries on hand so Cashew and Cranberry Bliss Balls seemed the appropriate way to go!

Recipe: Fig & Cinnamon Slice

My work is a big fan of morning and afternoon teas, it doesn’t take much for one to get organised and everyone is expected to bring something along to share. I much prefer going the homemade route but finding something new to make that will travel well (I walk to work) and satisfy the masses can be tricky! When I came across this recipe for fig & cinnamon slice in an old Sweet Food cookbook I knew I had to give it a try and let me tell you, I was fairly popular when I showed up to work the next day!

Recipe: Ginger-Garlic Soba

If you’ve been around these parts for any length of time then you’d know colourful salads are up there on my favourite food list, and this is no exception! Not only is it colourful, it’s also full of delicious flavours (and a bit of a spice kick!) from the tofu marinade, all supported by tasty, hearty soba noodles. What more could you want from a salad!?
