Recipe: Apple Cinnamon Cookies

I hadn’t been doing much baking lately, but I re-sparked my love for baked goods with my recent banana oat loaf, so when I found myself with some apples sitting in my fruit bowl I decided they needed to find their way into something baked as well, so cookies it was! With cinnamon as the natural partner to apples I knew it needed to be part of the plan, and then threw in some walnuts for their crunch factor, and then I was away!

Recipe: Sweet Potato & Chickpea Stew

After making lots of soups and curries I wanted to make a different kind of hearty meal for the cold, wintery nights we’re finally having so a stew it is! I’ve always loved sweet potato (almost as much as normal potato!) and you can’t keep me away from chickpeas so this was definitely right up my alley. The combination of lots of veggies and spices made for a delicious, warming meal which also made lots of leftovers to stock my freezer for the weeks ahead.

Recipe: Banana Oat Loaf

Welcome to the new look I Spy Plum Pie! I decided it was time to change things up a bit so after a bit of a play on the weekend, here we have it! It was mainly B’s handy work, with me sitting to the side picking colours and asking a whole heap of questions, and in the end we have gone for what I think is a more streamlined, simple layout. I’m still playing with some of the features, but so far I’m liking it! I’d love to hear your thoughts too!

Recipe: French Apple Cake

Mother’s Day coincided with my Nan’s birthday this year so I played host to my nan and parents for lunch, which of course required cake! Our family isn’t one for fancy, cream-filled cakes so I decided to keep it simple and take advantage of all the delicious apples in the fruit shop at the moment, so whipped up an apple cake. It was so well received that even after a big lunch my Nan went back for seconds!

Recipe: Pearl Couscous with Roast Tomato, Feta & Spinach

Pearl couscous is one of those ingredients I don’t cook with anywhere near enough, so when I was trying to come up with a salad as part of lunch for Mother’s Day I knew it was time to pull it out of the pantry again. It’s such a great base for a salad, and holds up well for leftovers too (if it lasts that long!).
