Recipe: Homemade Pizzas

Italian food never rates highly in my mind when deciding on somewhere to eat out, but homemade pizzas are a whole different story. I love that we can control both the types and amount of toppings we use and customise them to be exactly how we want them. We have a couple of go-to topping options, so I thought I would share them with you all! I’d love to hear about your favourite topping combos as well!

I never used to make my own dough because we’d usually decide to make our homemade pizzas on short notice, but after coming across this two ingredient pizza dough recipe on Dancing Through Sunday that all changed! It’s as simple as combining greek yoghurt & self raising flour and away you go! I found it needed slightly more than 1 cup of flour (plus the flour for the bench), but start with that and see how you go! The dough is thick but still light and fluffy and doesn’t taste at all like greek yoghurt, I promise.

Once you’ve rolled out your bases then it’s onto the toppings!

As long as we can get delicious, fresh tomatoes then one of our pizzas is always a very simple one. It consists purely of:

  • Tomato paste
  • Sliced tomatoes (generally two medium sized ones will do it)
  • Torn bocconcini cheese
  • Fresh basil leaves

That’s all you need! It’s almost impossible to get wrong, and so incredibly delicious.

Homemade Pizzas

Our other go-to pizza has a few more ingredients but is still super quick to whip up. Here’s what you need:

  • Tomato paste
  • Dried basil and/or oregano
  • Grated cheese
  • Diced pumpkin
  • Quartered cherry or mini roma tomatoes
  • Marinated capsicum
  • Torn bocconcini cheese

I spread the tomato paste then sprinkle it with the dried herbs and grated cheese, then top with the remaining ingredients and sprinkle some more herbs on top. Full of flavour and nowhere near as heavy as a cheese-laden pizza from your local takeaway joint.

It takes about 25 minutes on 180C to cook the pizzas through, which is faster than most takeaway places deliver! Plus it’s definitely a lot cheaper to make them at home! I’m a big fan of cold leftover pizza so homemade pizzas always means I’m sorted for lunch (or ahem breakfast) the next day as well!

    That yoghurt pizza is great for its simplicity. I’ve made pizza scrolls for my son and his friends a few times with it. When I make pizza at home though I usually go the Jamie Oliver pizza dough recipe and freeze half of it for the next pizza bake off.

      I really should get more organised and stock my freezer with pizza dough too! At least until then the yoghurt version is a delish alternative!
