Stuffed vegetables are often my go-to for meals where lots of sides and salads were being served and everyone else is having some kind of meat. They are hearty and warming, but also easy to prepare in advance, making them an excellent mid-week winter meal idea. This time around I’ve gone for a lentil stuffed capsicum, and it sure is delicious!

Canberra Eating: Akiba
After our afternoon at Bentspoke Brewery we went looking for somewhere for dinner and luckily were able to get a table outside at Akiba, which was obviously a popular spot for a Saturday night feed! Akiba does modern Asian food and is matched by an impressive drinks list including some very tasty cocktails (which we only sampled two of!).

Travelling and seeing the world is obviously something that is amazing to be able to do, but living in Australia it often requires a rather lengthy, not-so-fun flight (or two!) to get your holiday started.
