Yesterday was B’s birthday so we took the day off work and headed to Healesville Sanctuary instead. It was our last stop on our tour of the zoos of Melbourne, and whilst it was scorching hot we still had an excellent time amongst the native animals.
It’s been another flat out week at work, and with the disruption of Offspring filming in our house again I’ve felt a little all over the shop. However I still managed to fit in some relaxing down time, catchups with friends and some delicious food, so it’s definitely not all bad!
I love baking. If there’s ever a fundraiser or celebration morning or afternoon tea at work I’m the one that will show up with baked goods – with cupcakes generally my go to. So much so that I now have a cupcake stand that permanently lives on my work desk.
Veggie Fritters are something I love to make whenever I have a whole range of veggies to use up, because you really can throw in anything you like and they will taste delicious. So feel free to substitute the veggies I used for anything you have sitting in the fridge (or garden!)
