Recipe: Sun Dried Tomato Hummus

Every time I make dip I wonder why I ever buy it – it’s so simple, so fast and generally so much tastier when you make it yourself! I’m a big fan of hummus as I find it makes an excellent dip but is equally delicious as a spread in a sandwich so when trying to decide what to make for work this week I decided a variation on hummus was in order. I had seen sun dried tomatoes on special at my local Turkish grocer recently so decided they would do the trick and it turned out deliciously. Smooth and creamy with a nice little kick from the cayenne pepper – perfect!

How To: Roasted and Marinated Vegetables

I forgot to cancel my veggie box before I went to Queensland so found myself with a fridge full of amazing organic vegetables and not much time to eat them all. I didn’t want any to go to waste so cooked up and froze what I could and then decided that I would roast and marinate the zucchini, eggplant and tomatoes to store in the fridge until I got back. It worked really well and I have been using them in simple pasta dishes, in sandwiches and as part of a cheese platter since. Such a great way to prolong the life of your vegetables!

Review: Little Lane Espresso, Coolum

As I mentioned in my post about my few days in Coolum, each day included a morning stop for coffee. Lucky for me, my dad had tried out most of the coffee options before I got there and had settled on Little Lane Espresso as being the best on offer. The cafe is tiny, with just a few tables down a laneway (hence the name!) and it wouldn’t have looked out of place in Melbourne at all. It was always busy with locals and tourists alike, with extremely friendly staff who not only made delicious coffee but stopped to chat and even remembered our orders after only a day or so of visiting – impressive! Holiday Adventures: Coolum, Queensland

I’ve just returned from 6 glorious days in Coolum, on the Sunshine Coast in Queensland to windy, cold Melbourne and I’m not liking it one bit! My parents have been going to Coolum in the September school holidays (mum’s a primary school teacher) on and off for a few years now and they always stay in a two-bedroom apartment so that friends from Brisbane can come up and visit. A few weeks back they suggested I should come up and join them for part of the two weeks they were going and as I couldn’t seem to come up with a reason not to I booked my flights and away I went!
