Pineapple Passionfruit Coconut Milk Ice Cream & a Giveaway!

As the weather started to warm up my mind started ticking over with all the delicious summer foods I want to make this year. I don’t eat a whole lot of dairy and coconut milk ice cream tends to be rather pricy to buy, so an ice cream maker had gone to the top of my Christmas wishlist.

So you can imagine my excitement when I was contacted by the folks at Crazy Sales to try out one of their ice cream makers! Now I can make dairy-free ice cream to my heart’s desire all summer long! I’m sure some sorbets will be on the cards as well as I believe the ideal way to order ice cream is to have 1 sorbet for every 2 cream based flavours to help provide balance and offset the richness. Ordering ice cream is an art form that I’ve been clearly thinking about way too much!

Anyway, back to the recipe at hand! I decided I would start my homemade ice cream adventures with a tropical delight, making the most of the deliciously sweet in season pineapple and combining it with B’s favourite fruit – passionfruit. So here goes, my pineapple passionfruit coconut milk ice cream recipe (that’s quite the mouthful!)

Ingredients List

  • Half a pineapple
  • Can of coconut cream (full fat)
  • 2tbs liquid sweetener (maple syrup, agave or honey if you don’t need it vegan)
  • Pulp of 4 passionfruit

Steps

  1. Remove the exterior of the pineapple and cut the flesh into small pieces
  2. Combine in a blender with the coconut milk and liquid sweetener until smooth
  3. Pour into your ice-cream maker and follow instructions
  4. About halfway through add the passionfruit pulp and then leave to finish churning
  5. You can either enjoy it in its slightly soft state or pop it in the freezer until it reaches your desired level of frozen!
  6. Scoop and enjoy!

The ice cream is super creamy and definitely sweet enough despite not adding lots of sugar, which means you can go back for seconds and not feel bad about it! I can see this flavour being on high rotation over the coming months, although then again, now that I have endless flavour possibilities maybe I’ll need to mix things up a bit!

The machine I received is super easy to use, and as it only has a few parts it’s also easy to clean! When I was first looking into ice cream makers I read lots of reviews that said some brands were extremely noisy, but thankfully this isn’t too bad at all, which is doubly lucky given I live in an apartment! It also comes with a few recipes to get you started, including a raspberry frozen yoghurt that I think might be next on my list to try!

    I absolutely love ice cream and I would love an ice cream maker! I am always experimenting with different fruits and coconut milk buttermilk etc … my favourite is bacci double choc and coffee flavours when I buy one … I know they are experimenting with all sorts of different and unusual flavours sweet and savoury!
    I’ve seen but not tried, a beetroot and poppy seed, a sweet potato, a black sesame one, which looks stunning! and a blue cheese!
    I have had and loved a blackberry cheese cake one which was delicious! this one is really packed with sugar which I am trying to eliminate … licking ice cream is good for you though it is apparently ancient memory from the womb! … cheers! m:)X

    That ice cream looks delicious!

    The best (and also strangest?) Ice cream flavour I’ve had was Rice Ice Cream, from this amazing gelato shop in Rome – they had a ridiculous number of different flavours, and they were all amazing (all the ones I tried anyway :p )

    My all time favourite ice cream flavour is banana with Murray River salted caramel. It’s more rich and zingy than sickly sweet. And I love that they’re creating a pretty pink salt by harvesting saline water, and working towards undoing some of the damage agriculture is doing to our waterways.
    However, one thing I have always wanted to do is create some sorbets using the herbs from my garden. I just made my housemate a cold remedy tea out of yarrow, thyme, mint, and ginger. Aside from smelling and tasting great, just imagine if that could be translated into a sorbet cure for those dreaded summer illnesses that crop up from time to time. Delicious and nutritious. xx

    I tend to stay away from weird flavours, I have no sense of ice cream adventure. I have recently be in both Gelato Messina and Spring Street Grocer and have stuck to reasonably traditional flavours. Maybe I need to branch out more. I do have rocky road Sara Lee in my freezer. Speaking of which… (Wanders off to get ice cream)

    Technically not an ice cream or a sorbet, but the best I’ve had to date has been chai frozen yoghurt. Oh my word that was amazing!

    The best sorbet I’ve ever had was at a restaurant near Daylesford. It was part of a dessert, but we were so full at the end of our dinner that we just asked if we could try the sorbet on it’s own as we were intrigued. It was beetroot! The colour was amazing and the flavour was sweet with a little bit of earthiness. It was delicious! I wish that I could have fit the whole dessert in to try the combination of flavours.

    I tend to stick to classic flavours like chocolate and had the best chocolate ice cream at Massimos gelateria in Noosa, Qld.

    I’m so not allowed to enter this comp (Mr Smaggle WILL KILL ME if I bring another applience into the house) but I love ice cream so why not? Have you seen Nathan for you when they make Poo flavoured ice cream? It’s awesome.

    I love homemade icecream, not sure if I will try the pineapple, more likely mango and passionfruit. Of course the best is blackforest ice cream, all that chocolate and cherries.

    Oh you are a clever chick. My favourite ice cream flavour is chocolate with big chunks of peanut butter in it. Hard to get. I would love to be able to make my own 😉

    Pina coladaaaa! There was a place in hobart that had something like bacon and banana ice cream. I think the dude used to work under Heston or something. It was all very ooh la la.

    I once tried a curry flavour, it wasn’t very nice, but at least I can say I tried it! My favourite one is Lemon Meringue pie flavour (from Coles I think), it was absolutely delicious!

    I’ve led a sheltered and boring life when it comes to flavour so Caramel is the nicest I’ve had.
    If I won this I would try so many more flavours staring with a Banana/Chocolate combination.

    I believe the best flavour is still to come in case I win the Maxkon ice-cream maker. I would love to try your Pineapple Passionfruit Coconut Milk Ice Cream recipe. It sounds delicious. I love fruit or berry ice-cream because it is so refreshing; preferably forest fruits.

    Bacon… it was dare that I regret. It tasted like I was dunking a piece of greasy bacon into a glass of sweetened cream. It made me feel queasy every time I saw ice cream for months.

    Whilst I was visiting an Aboriginal community in far north QLD I went to a local shops which sold home made Avocado and Promite Ice-Cream. It was weird but more like a main than a dessert, but really strangely it was nice.

    My nostalgic favourite is strawberry, which I’d get as a kid once a year from the Royal National Agricultural Show in Brisbane. The cone would be packed with fresh strawberries and, then fresh creamy strawberry ice cream on top. Never tasted anything like it again, perhaps I can make it myself….hmmmm

    I love Cold Rock Deli Ice creamery – yes, although it might be a regular chain store the experience and opportunity to add toppings and flavours to create my own mix -(smashed Snickers and Maltesers with real strawberry syrup and chocolate fudge is divine) – makes it one of my favourite family experiences.
