Recipe: Apple Strawberry Crumble Cake

I recently had a few family friends over for an afternoon tea to celebrate being in my little apartment for a year (how time flies!) and as it’s not an afternoon tea with cake I knew I had to get my bake on. I wanted to make use of the delicious summer fruits while they are still around in abundance, so an apple strawberry crumble cake was the answer!

Apple Strawberry Crumble Cake

The cake was pretty simple to whip up but I like that thanks to the crumble it looks slightly fancier than just a tea cake. We ate it at room temperature but I think it would also be delicious warmed up with a scoop of ice cream on the side as a dessert. Either way it’s definitely delicious!

I slightly adapted the recipe from one I found on Taste.com

Ingredients List

For the Cake

  • 2tsp cinnamon
  • 2tsp nutmeg

For the Crumble

  • 50g chilled butter
  • 1/2 cup plain flour
  • 1/4 cup brown sugar
  • 2tsp cinnamon
  • 2tsp nutmeg

Steps

  1. Preheat oven to 180C and line a 20cm cake pan with baking paper
  2. Beat the butter, sugar and vanilla with electric beaters until pale and creamy. Add the eggs one at a time and beat well with each addition.
  3. Fold in the flours, cinnamon, nutmeg and milk until just combined.
  4. Spoon into the prepared pan and smooth out the top of the mixture
  5. Peel, core and thickly slice the apple and hull and halve the strawberries. Layer on the top of the cake
  6. To make the crumble chop the butter and combine with the flour in a bowl and combine with your fingers until it resembles coarse breadcrumbs.
  7. Add the brown sugar, cinnamon and nutmeg and mix through. Sprinkle over the top of the cake.
  8. Bake the cake for 70 minutes, until a skewer comes out clean. Leave to cool in the pan for 10 minutes then move onto a wire rack to continue to cool.
  9. Enjoy!

This cake smelt so delicious while it was baking thanks to the combination of the cinnamon and nutmeg in the crumble and the apple and strawberry pieces. It was rather difficult not to just cut straight into it when it came out of the oven!

There wasn’t much left after my visitors had left either! Just two lonely little pieces (don’t worry, they were soon put out of their misery!).

    I absolutely love a crumble cake and this sounds gorgeous. I wish strawberry season could last forever 🙂
    The ripples on the side (from baking paper I assume) looks so effective too. I think I will try to simulate that next time I do a tea cake.
