Recipe: Baked Eggs

After seeing how easy baked eggs were on Stacey’s blog I decided to give them a go, mixing up the recipe a little to add a few other things I had in the fridge. Mine didn’t turn out quite as nice looking as Stacey’s did – but they still tasted delish!

 Ingredients List

  • Eggs (1 person)
  • Jar of tomato passata (half the jar for 2 people)
  • Small onion
  • Garlic clove
  • Chilli flakes
  • Fresh tomatoes
  • Spinach
  • Goat’s Cheese

Steps

  1. Preheat oven to 180C
  2. Dice the onion and garlic
  3. Cook the onion and garlic until transparent
  4. Add the passata, fresh tomatoes and chilli flakes and simmer for 5 minutes
  5. Add the spinach and goat’s cheese and stir through
  6. Pour the mixture into ramekins or a heatproof dish
  7. Crack an egg into each ramekin
  8. Cook in the oven for 10-15 minutes – check regularly. You want the whites to be cooked but the yolks still runny
  9. Enjoy!

I’d recommend having some crusty bread on hand to help mop up the sauce – it can get a bit messy!

    I’ve been wanting to cook baked eggs at home for ages. Will have to give this a go!

      They were super easy – and if you made the sauce the night before then it would be even quicker in the morning. I was pretty hungry by the time they were ready!

    Oh I love baked eggs. I usually do them with feta, but I think they would be just divine with goat’s cheese! So decadent!!
