Recipe: Berry Mint Icy Poles

Phew, we’ve made it to the last Meatless Monday linkup for the year! I can’t wait to see what you’ve all been cooking in the lead-up to Christmas!

With Summer upon us again it was definitely time to pull out the ol’ icy pole moulds and get creating. For me it’s hard to beat berries as the perfect summer treat (although pineapple comes in a very close second!) and with my mint plant going berserk on my balcony I decided a combination of the two was in order. Behold, my deliciously refreshing berry mint icy poles!

I love the colour of these icy poles (or popsicles for our American friends!), and that you can still see chunks of the berries. B was mighty impressed when I pulled these out of the freezer! They’re super easy to whip up as well, so they’re definitely one the kids can get involved in, just watch out for pink fingerprints afterwards!

So, onto the recipe!

Ingredients List

  • 1 cup strawberries
  • 1 cup blackberries
  • 1 cup raspberries
  • Juice of a lemon
  • 1/4 cup mint leaves
  • 1/3 cup boiling water
  • 1/3 cup caster sugar

Steps

  1. Roughly slice the strawberries (and the blackberries if they are large)
  2. Combine berries in a bowl with the lemon juice and finely chopped mint
  3. Mash slightly with the back of your wooden spoon then leave to sit for 20-30 minutes
  4. Meanwhile, combine boiling water and sugar and stir until dissolved then set aside to cool
  5. Pour the sugar syrup over the berries and stir to combine
  6. Spoon into icy pole moulds and freeze for 4-6 hour (I left mine overnight)
  7. Enjoy!

Easy as that! I used normal caster sugar in these, but if you prefer you could swap it out for coconut sugar and they will work just as well! You could swap out the blackberries for blueberries if you prefer, but just be prepared for everything to go rather purple if you mash the blueberries, they have a habit of staining everything!

I think these may have officially usurped Frosty Fruits from the top of my icy pole list, and that’s saying something! Some of my strongest childhood memories of summer revolve around spending our days running between the pool and watching the Australian Open tennis or the cricket on the tv when it got too hot to stay outside any longer, all of which was usually done with a Frosty Fruit in hand! I think this year I might have to whip some of these up at my folks place instead!

    I’m addicted to those colours … they energize me!
    I’m going to buy some popsicle molds!
    as I tend to make a large slab and have to make granita out of them! …
    the choice is limitless with fruits really!

      I don’t know how you cope with the humidity, I’ll take Melbourne’s dry heat any day! Hopefully the icy poles help!

    These icypoles look great – homemade icypoles are high up on my to make list at the moment with 39 degree days forecast for next week!
