Recipe: Black Bean Dip

My love of hummus has been well documented here on I Spy Plum Pie, with lots of variations showing up over the last few years. I decided to mix things up a little recently and make dip using one of my other favourite beans, so black bean dip it is! Now, this dip is definitely not going to win any prizes for how it looks, but believe me it’s well worth it for the flavour!

Like most dips I have shared before this one is super quick & easy to whip up but doesn’t mean it is lacking in flavour, no sirree! The best part about homemade dips is that you can tweak the quantities of each ingredient to suit your taste buds, and you can also be sure it has no nasties in it. Excellent!

Ingredients List

  • Can of black beans
  • 2 cloves garlic
  • 2tbs olive oil
  • 2tbs tahini
  • Juice and zest of a lime
  • 1tsp cumin
  • 1tsp ground coriander
  • 1/4 cup fresh coriander
  • 1 fresh chilli (jalapeno if you can)

Steps

  1. Drain and rinse the black beans then place in the bowl of a food processor or stick mixer
  2. Roughly chop the garlic and add to the bowl with the oil, tahini, lime zest and juice, cumin and coriander
  3. Roughly chop the fresh coriander and chilli and add most to the bowl, retaining a little
  4. Blitz until well combined, then season with salt and pepper. If you like it a little thinner add some additional oil then blitz again
  5. Stir through the remaining coriander and chilli
  6. Spoon into a bowl and serve with veggies or pita chips
  7. Enjoy!

Using a jalapeno chilli will keep it more Mexican in flavour but any chilli will work, so use whatever you have on hand. You can remove the seeds if you prefer things a little less spicy, or go nuts with additional chillies if you’re a fan of the heat. Personally I stick with one chilli, but keep almost all the seeds in so it still has a nice amount of spice to it without burning my mouth off!

The black beans themselves don’t have a heap of flavour so don’t skimp on the lime juice, cumin or coriander, they do most of the heavy lifting in this dip! Luckily the black beans bring a good whack of protein into the mix so they aren’t completely useless! The whole thing can be whipped up in under 10 minutes, so you can have a delicious snack ready to go in next to no time. Yes please!
