Recipe: Blueberry Lime Mojito

I do love a summer cocktail, and this blueberry lime mojito is no exception! It’s refreshing, delicious and not too sweet. Perfect for summer, particularly a BBQ at home. They’re quick and easy to whip up as well, and don’t need any fancy equipment!

Blueberry Lime Mojito | I Spy Plum Pie

Ingredients List

  • 2 cups blueberries
  • Juice of 3 limes
  • 1/4 cup mint leaves
  • Sugar syrup
  • White rum
  • Soda water
  • Ice

 Steps

  1. Blend together 1.5 cups blueberries with the lime juice until smooth
  2. Pour into a jug, or serving glasses, and muddle in the mint leaves, and sugar syrup to taste (start with 1tbs and see how you go!)
  3. Add the rum (1-2 shots per person), soda water and ice
  4. Garnish with more blueberries, slices of lime and mint leaves

I love the combination of flavours in this blueberry lime mojito, it’s so summery! It’s a great one to whip up when you need something fancy looking in a hurry. If you don’t have any sugar syrup already prepared you can just stir in a teaspoon or two of sugar, although I keep some sugar syrup in my fridge for those exact times!

If you’ve only got frozen blueberries then that’s okay too! Just let them defrost enough that you can easily blitz them with the lime juice, then mix away from there. I also learned recently that rather than crushing your mint leaves you should apparently clap them! It’s meant to be a slightly more gentle way to release the flavours – I’d love to know if you’ve heard that as well! Either way, you get to give yourself a round of applause while making a cocktail which is pretty entertaining!
