With the colder weather upon us all I wanted to make was soup! This carrot parsnip and sweet potato soup is filling, warming and packed with flavour. Whip up a big batch and freeze the leftovers – you’ll thank yourself later!
Ingredients List
- Brown onion
- 3 cloves garlic
- 5cm ginger
- Red chilli
- 3 medium carrots
- 2 medium parsnips
- 400g sweet potato

2tbs extra virgin olive oil

1tbs ground coriander

2tsp ground cumin

1/2 cup red lentils
-
1.5 litres of vegetable stock

Greek yoghurt
-
1/3 cup fresh coriander leaves
- 1 lime
Steps
- Finely dice the brown onion, set aside
- Mince the garlic and grate the ginger, set aside
- Finely chop the chilli, set aside
- Peel and dice the carrots, parsnips and sweet potato
- Heat the oil in a large, heavy bottomed saucepan then put the onion in the pan and cook for 2-3 minutes
- Add the garlic and ginger and cook for a minute
- Add the chilli and cook for a further minute
- Combine the carrots, parsnips and sweet potato in the pan and toss with the onion mixture. Cook for 3-4 minutes
- Add the coriander and cumin and toss to coat
- Rinse the red lentils then drain and add to the pan
- Add the vegetable stock, bring to the boil then simmer for 15-20 minutes until the vegetables and lentils are cooked through
- Remove from the heat and blitz until smooth
- Season, then serve with greek yoghurt, fresh coriander and lime juice
I know that looks like a lot of steps, but I promise you it’s super simple! It’s definitely worth it for the end result – this carrot parsnip and sweet potato soup is a definite winner. I love the heat from the chilli, and the lime juice and greek yogurt adds excellent freshness. It’s just such a good soup!
The red lentils help bulk the soup out which makes it filling enough for lunch and dinner, although I would never say no to some crusty bread on the side of course! It freezes really well too, so I popped a couple of serves in the freezer for the cold nights ahead. I can be so bad at eating lunch at home on weekends if I don’t plan ahead, so my freezer stash is definitely going to come in handy!
