Recipe: Charred Zucchini Israeli Couscous Salad

This charred zucchini israeli couscous salad is fresh, summery and packed with flavour. It makes excellent use of herbs and is hearty enough for lunch or to take along to a BBQ. It’s simple to whip up as well – what more could you want!

Ingredients List

For the Salad

  • 1½ cups israeli couscous
  • 2tbp olive oil
  • 3-4 zucchini
  • 2 cloves garlic
  • Lemon
  • 3/4 cup hazelnuts
  • 1/4 cup basil
  • 1/4 cup parsley
  • 1/4 cup mint

For the Dressing

  • 150g peas
  • 50g parmesan style cheese
  • 125g natural yoghurt
  • 1/2 cup basil
  • 1/2 cup mint

Steps

  1. Cook the israeli couscous in a saucepan with 3 cups water for 10-12 minutes, until al dente, then drain, rinse well and drizzle with olive oil. Set aside to cool
  2. Defrost the peas then combine all the dressing ingredients in a blender and blitz to a pesto-like consistency. Taste, then season and set aside
  3. Slice the zucchini into half lengthways. Heat a frypan and add 1tbs oil then add the zucchini
  4. Thinly slice the garlic and add to the pan, then cook the garlic and zucchini until cooked through and charring, turning as required. Squeeze over the lemon juice
  5. Remove from the heat and slice the zucchini in to bit size pieces. Add to the israeli couscous with the garlic and toss to combine
  6. Toast the hazelnuts and then roughly chop and add to the israeli couscous
  7. Roughly tear the basil and chop the parsley and mint and add to the bowl, tossing gently to combine
  8. Spoon over some of the dressing, gently toss then add more to taste

I loved that I could use lots of herbs straight from my balcony garden too – they definitely are my favourite thing to grow. The hazelnuts add excellent crunch, and you know how much I love israeli couscous!

You don’t want to drown the salad, although it’s hard to stop pouring the dressing given how delicious it is!
