Recipe: Choc-Oat Cookies

We recently held a bake-sale at work to raise funds for Nepal, and I figured you can’t go wrong with good ol’ fashioned choc-oat cookies! Unfortunately I was then too sick to actually take them to work on the day of the sale, but they were still all devoured by my team the next day! Plus, we raised lots of money so that’s really the main thing!

Choc-oat cookies

These cookies are super simple to whip up, you can have them mixed up and ready to eat within half an hour, using ingredients you more than likely already have sitting in your cupboard. This makes them perfect for a last minute treat, plus the addition of oats means you don’t have to feel guilty if you happen to accidentally eat more than one!

So, here’s how to make them!

Ingredients List

  • 150g butter
  • 3/4 cup brown sugar
  • 1 egg
  • 1tsp vanilla
  • 1 cup plain flour
  • 1/2tsp baking powder
  • 200g chocolate
  • 2 cups oats

Steps

  1. Preheat oven to 180C
  2. Beat butter and sugar together until well combined and lightened in colour
  3. Add the egg and beat well, then add the vanilla and beat for another 30 seconds
  4. Fold in the flour and baking powder until just combined
  5. Roughly chop the chocolate (I used a block of milk chocolate) then add to the batter with the oats and fold through
  6. Roll into balls and place on a lined baking tray and flatten slightly
  7. Bake for 12-15 minutes, until lightly golden on top then cool on the tray for 5 minutes before cooling on a wire tray
  8. Enjoy!

Choc-oat cookies

I kept my chocolate kinda chunky, but you could use choc-chips if that’s what you have on hand! I love how they are slightly crunchy on the outside and around the edges but soft in the middle, deeelicious. The oats make them nice and hearty which makes them an excellent mid-arvo treat to keep you going until dinner. Really, they are just a pretty all round excellent cookie! Chocolate and oats, can it really be beaten?
