Recipe: Coconut, Almond & Date Cookies

Whenever my folks come over they look to see if there’s any baked goods in my kitchen, and they’re always disappointed if they come up short. So the next time I was heading out to visit them I knew I better not show up empty handed so whipped up these coconut, almond & date cookies which were definitely well received!

They don’t have any added sugar, use almond meal rather than flour and have the goodness of oats so they are about as healthy as a cookie can get! Most importantly though, they are also extremely delicious which at the end of the day is what you want from a cookie!

Coconut, Almond & Date Cookies

I slightly adapted the recipe from one I found here.

Ingredients List

  • 2 cups almond meal
  • 1 cup rolled oats
  • 1/2 cup flaked coconut
  • 1tsp baking powder
  • 1tsp ginger powder
  • 1tsp nutmeg
  • 1/2 cup pitted dates
  • 1/2 cup coconut oil
  • 1/4 cup milk (I used almond)
  • 2tbs honey

Steps

  1. Preheat oven to 180C
  2. Combine almond meal, oats, coconut, baking powder, ginger powder and nutmeg in a large bowl and stir to combine
  3. Finely chop the dates and add to the bowl, stirring to distribute them (you might need to use your hands to stop them clumping together)
  4. Melt the coconut oil and add to the bowl with the milk and honey, stir to combine
  5. Roll into balls and place on a lined baking tray, flattening slightly with the back of a spoon
  6. Bake for 12 minutes until lightly golden, leave to cool for 5 minutes then transfer to a wire rack to cool completely
  7. Enjoy!

One of the best things about these cookies is they only take one bowl and they are super quick to whip up, so they’re perfect for last minute lunchbox treats! They go down particularly well with a glass of milk too!
