Recipe: Go-To Guacamole

We’re back for week 3 of the Meatless Monday linkup & I can’t wait to see what you’ve all been cooking! As for me, I whipped up this guacamole for my recent grand final day BBQ and I have to say, I don’t know the last time I made something that has received such rave reviews from everyone present! I think I could have made at least twice as much and it would have all been eaten, so it’s safe to say this is now my go-to guacamole recipe!

Avocado and I actually got off to a shaky start, I couldn’t stand the texture so would avoid it at all costs. This wasn’t helped by the fact that when I was 16 I spent 10 weeks living with a family in Bordeaux and I had a three-course lunch every school day at my host grandmas house, where quite often the first course was just half an avocado served with balsamic vinegar (I know, poor me, sound the violins!). To begin with my french wasn’t good enough to explain that I really wasn’t a fan of avocado, and I didn’t want to offend her, so I would eat as much of it as I could each time, and then it was too late to tell her I didn’t like it. Let’s just say after I came back to Australia it was quite some time before I tried avocado again! Now though, you can’t keep me away from it!

Go-To Guacamole

So, over to the go-to guacamole!

 Ingredients List

  • 3 ripe avocados
  • 1 lime
  • 1/2 tsp salt
  • 3/4 tsp cumin
  • 1/2 red onion
  • 2tbs fresh coriander
  • 2 roma tomatoes
  • 1 clove garlic
  • 1 red chilli (with or without seeds)

Steps

  1. Halve the avocados and spoon the flesh into a bowl.
  2. Add the juice of the lime, salt and cumin and roughly mash with a fork or potato masher until as smooth as you like (I keep mine quite chunky)
  3. Finely dice the onion and coriander, dice the tomatoes and chilli and mince the garlic then add to the avocado
  4. Stir until combined then leave to sit for an hour before serving to allow the flavours to develop
  5. Enjoy!

Go-To Guacamole

So much delicious flavour in one little bowl! I generally remove most of the chilli seeds as I don’t think it needs the added spice, but if you’re a big fan of all things spicy then by all means keep the seeds! I love that the coriander was able to come straight off my little balcony garden too, nothing better than freshly picked herbs!

    The first time I saw an avocado was when I was about 7. We were staying in our holiday house in Ballina and the next door neighbour brought out a snack of avo on toast for her granddaughter (my holiday buddy). I was quite taken aback by this green stuff on toast but she persuaded me to try it. My mum couldn’t believe her ears when I started requesting it all the time (I was a pretty fussy eater).
    I did go through a hating phase much later when everyone around me was getting into the toasted avo, chicken and cheese sandwich (it was a food phase at the time)- hot avocado….ergh. It goes slimy! Took a while to come back to it after that.

      Ah yes, I remember the ol’ chicken & avocado phase. No thankyou! Even now I don’t think I could do it toasted, it’s much better fresh!

      Yep, they really do make a difference! Now that avocados are so cheap I think I’ll be making this a bit!

    I’m the same! I was weirded out by avocado but now I crave it. Guac is such an important staple to nail so thanks for sharing your tips. I am also SUPER jealous you got to spend 10 weeks in Bordeaux – I am obsessed with France. Lucky Liz!

      My pleasure! Nothing beats a good guac! And I know, SO lucky I got to do that. I’ve been back a couple of times too, such a gorgeous part of the world. Unfortunately as a 16 yr old I didn’t quite appreciate the wonderful Bordeaux wines as well as I would these days!

      Salsa is a perfect match to guac! Loving how cheap avocados are, I’ve been go through so many from my local fruit shop the last few weeks!
