Recipe: Haloumi Pomegranate Salad

This haloumi pomegranate salad is similar to one I whipped up as part of our Christmas lunch, which was definitely well received! It takes very little cooking so it’s perfect for those summer nights that are far too hot to turn the oven or when you need something ready in a flash!

I love adding pomegranate to salads when I can get my hands on them, they not only add a gorgeous burst of colour but a delicious burst of flavour too! Plus I got to use lots of homegrown mint in this salad which always makes me a very happy camper! There’s not much better than using herbs from your garden in the kitchen in my mind!

Haloumi Pomegranate Salad | I Spy Plum Pie

Ingredients List

  • 1 cup israeli couscous
  • 180g haloumi
  • 1/2 cup walnuts
  • 1 pomegranate
  • 1/2 cup mint
  • 1 cup spinach
  • Juice of a lemon
  • 1/4 cup olive oil

Steps

  1. Heat a splash of oil in a saucepan and toast the couscous for a minute, then add two cups of boiling water, reduce to a simmer, cover and cook for 10-12 minutes or until cooked through
  2. When cooked drain and rinse the couscous then place into a serving dish
  3. Meanwhile, slice the haloumi and cook until lightly golden on both sides, set aside
  4. Dry toast the walnuts until lightly toasted and set aside
  5. Chop the pomegranate in half then remove the seeds by firmly hitting the outside with a wooden spoon, squeezing gently to help release them
  6. Roughly chop the mint
  7. Combine the couscous with the haloumi, walnuts, pomegranate seeds, mint and spinach and toss gently
  8. Mix together the lemon juice and oil and drizzle over the salad
  9. Enjoy!

So simple but so delicious! I actually use a lemon flavoured olive oil that I picked up on my Costco adventure, but when I didn’t have that it was fresh lemon juice all the way! This salad is a great combo of the salty, squeaky haloumi, the sweet pomegranate and the fresh mint so it’s definitely not lacking in flavour! Plus, you all know about my love of israeli couscous!

I’ve made this salad for work lunches and to take to a BBQ, it really does work for all scenarios! Well, except one maybe – we always turn our leftover Christmas salads into fillings for rolls to take to the cricket and this one didn’t work quite so well, the couscous went everywhere! But given I doubt many of you were planning on putting it in a sandwich you’ll be a-ok!
