Recipe: Peach Mint Syrup

When I visited my parents over Christmas I was greeted by peach and plum trees laden with fruit, with my mum in a daily battle with the birds to ensure we got at least some of the ripest fruit before they helped themselves to it! Mum had been madly stewing them and baking muffins but we couldn’t use them fast enough, so I thought I’d try something different with a few of the peaches and turned them into a syrup! 

The syrup is perfect for flavouring soda water or iced tea for a refreshing summer drink and also makes an excellent addition to cocktails – hello New Year’s Eve celebrations!

The recipe I used was from the wonderful Oh My Veggies, I just switched up the thyme that Kiersten used for mint instead, as it is growing in large amounts in my garden right now!

Ingredients List

  •  4 peaches
  • 2/3 cup sugar
  • Sprigs of mint

Steps

  1. Remove the stones from the peaches and cut into quarters
  2. Combine all ingredients in a saucepan and bring to the boil.
  3. Reduce to a low heat and cook for 30 minutes, stirring every few minutes with a wooden spoon and crushing the peaches a little each time
  4. Strain the syrup with a fine mesh sieve and discard the solids. Refrigerate the syrup for up to a week
  5. Enjoy!

I used a splash of the syrup with some lemonade and vodka on a warm Melbourne evening and it was absolutely delish.

I have a feeling I’ll be making a few batches of this over the summer to turn into jugs of both cocktails and mocktails – it’s definitely a crowd pleaser!

    This looks like it would be a perfect addition to iced tea. I will definitely have to try this.
