Recipe: Plum Compote & My 6th Blogiversary

So somehow yesterday was my 6th blogiversary! Yep, that’s right, I Spy Plum Pie has been kicking around for six whole years now! At this time every year I like to share a plum-themed recipe, and this year I’ve got the recipe for this deliciously simple plum compote. As always, my mum’s plum trees were bursting at the seams, so this is an excellent recipe to use up some of those rather ripe plums I had in my fruit bowl.

Plum Compote | I Spy Plum Pie

Ingredients List

  • 500g ripe plums
  • 250ml boiling water
  • 1/2 cup caster sugar
  • 2 cinnamon sticks
  • 3 whole star anise

Steps

  1. Halve the plums and remove the stones. Set aside
  2. Combine the boiling water and caster sugar in a saucepan and simmer until the sugar dissolves, whisking occasionally
  3. Add the plums, cinnamon sticks and star anise and stir gently to combine
  4. Simmer for 8-10 minutes until the plums are softened and breaking down, but still retain some shape
  5. Remove the plums and leave the syrup to simmer, stirring occasionally, until thickened to your desired consistency
  6. Pour the syrup over the plums and set aside to cool

I wasn’t kidding when I said this plum compote was super simple! I also wasn’t kidding when I said it was delicious! It’s also super versatile. Personally I mainly served it for breakfast on top of yoghurt and granola, or a chia pudding, but it also makes an excellent dessert with some ice cream.

It stores well in a jar in the fridge for a few days, so you can make as much as you might need for the week ahead on a Sunday and enjoy plum compote for the rest of the week. No one is going to complain about that!
