Recipe: Potato and Leek Soup

It’s been a soup extravaganza at my place recently – this is the first winter I’ve owned a food processor so I’m loving being able to whip up big batches of soup in all kinds of flavour combinations. I had a few leeks in my organic veggie box recently so I thought a good ol’ potato and leek soup was in order. Creamy, hearty and delicious – everything you want on a cold winter’s night!

Ingredients List

  • 2 leeks
  • 6 medium/large potatoes
  • Thumb sized piece of ginger
  • 3 cloves garlic
  • Onion
  • Fresh thyme (I used about 2tbs but add to your taste)
  • 1 litre veggie stock
  • Cream

  1. Dice the onion and leek
  2. Crush the garlic and grate or finely chop the ginger
  3. Dice the potatoes
  4. Remove the leaves from the thyme
  5. Heat oil in a heavy bottomed saucepan and saute the onion, leek, ginger and garlic for 3-4 minutes
  6. Add the potato and the thyme and stir to combine
  7. Pour in the veggie stock, cover and simmer for 20-25 minutes (until the potato is soft)
  8. Cool slightly then blend and reheat
  9. Season with salt and pepper and add a drizzle of cream
  10. Enjoy!

Have you been enjoying lots of soup this winter? What combination should I try next?

I made potato and leek this weekend too! Recently I’ve also made a sweet potato and lentil red curry soup by Donna Hay, was very yummy. Not 100% vego as it had shrimp paste in the curry paste and fish sauce in it, but I think something like that could be easily tweaked! 🙂

Ooh that does sound delicious, and easily converted to be vege-friendly! I haven’t made a lentil soup yet as I’m loving using my food processor, but something along those lines might need to be on the menu next!

What a perfect warming soup for our freezing Melbourne winter nights. I love using my food processor for soup blending. It’s so quick and comes out super smooth! Love it 🙂
