Somehow it’s that time of the year again – my blogiversary! Eight years ago I kicked off this blog, and I always celebrate with a plum-focused recipe! This year I have whipped up these oh so tasty rosemary thyme roasted plums!
- 8-10 plums
- 2tbs honey
- 1tbs olive oil
- Dried or fresh thyme
- Dried or fresh rosemary
- Preheat oven to 200C
- Halve the plums and remove the stones. Place in a baking tray
- Drizzle over the honey and olive oil
- Top with thyme and rosemary and sprinkle with salt
- Roast for 12-15 minutes, until the honey is caramelising and the plums are cooked through
That’s all there is to these rosemary thyme roasted plums! They’re so simple but seriously delicious, and they are also very versatile too! Serve them with yoghurt or ice cream, pop them on your muesli, eat them warm or cold – any way you like!
I used a mix of plums that came straight from my parents trees, and all of them were delicious. Try and use plums that are ripe but not too ripe to stop them from just collapsing as you roast them.
