Recipe: Silverbeet & Ricotta Pasties

Silverbeet and I have had an interesting past – we ate a lot of it when I was growing up because it was always growing in my mum’s veggie patch, however I never really liked it all that much. I guess that’s not surprising as leafy greens aren’t normally kids favourite food! I had a bit of a sneaky habit of picking silverbeet from the garden and feeding it to our guinea pigs to try and avoid eating it again for dinner! Luckily those days are long behind me and I actually enjoy eating it now – no guinea pigs required!

Ingredients List

  • Bunch of silverbeet
  • 250g ricotta
  • Onion
  • 2-3 cloves garlic
  • 1 tbs nutmeg
  • Juice of half a lemon
  • Puff pastry
  • 3 eggs

Steps

  1. Preheat oven to 250C
  2. Finely dice the onion and mince the garlic
  3. Cook the onion and garlic in a frypan until translucent then leave to cool
  4. Cook the silverbeet in boiling water for a few minutes, then drain and rinse under cold water
  5. Remove as much excess water as possible then roughly chop
  6. Mix the onion, silverbeet, ricotta, nutmeg, lemon juice and one beaten egg in a bowl
  7. Spoon the mixture onto the pastry sheets and fold the corners together. I made one large and eight small pasties.
  8. Beat the remaining two eggs together with a little water and brush over the pasties
  9. Bake in the oven for 20-25 minutes unti golden brown then enjoy!

    Oh, there were so many veggies I refused to eat as a child and I love now–eggplant, Brussels sprouts. And some I still refuse to eat, like avocado. 🙂 These pasties look delicious!

      I’m still working on brussel sprouts – I don’t avoid them completely like I did as a kid, but I wouldn’t actively choose them either. Avocado is another one I am learning to like – although I’m more proactive in that case!

      Radishes! I don’t think I have a real opinion on radishes – I don’t really eat them but I also don’t go out of my way to avoid them, what don’t you like about them?!

        When I was a kid I once put a whole radish in my mouth thinking it was a cherry. They’re hot and bitter and NOTHING like a cherry. Since then, I’ve always had a bit of a fear of radishes. Even seeing them in the fruit and veg shop makes me cringe!

          Oh wow, I can definitely understand your fear, that would have been horrible! You poor thing! Lucky they aren’t a vegetable you find in everything so they are easier to avoid than some veggies would be!

    I totally loathed SB growing up – it was prolific in Dad’s veggie patch (as we’re chokos, blergh). I reckon I could do one of these babies over, though. Time and pastry cure all ills. x

      And cheese. Cheese definitely helps mask all kinds of flavours! Not that I need it for silverbeet anymore thankfully!
