Recipe: Strawberry & Peach Vodka Pop

This month’s Sweet Adventures Blog Hop couldn’t have had a more perfect theme given the ridiculous heat Melbourne has faced over the last week – it’s a popsicle party! The always delightful Love Swah is hosting and I’m rather excited to see what everyone has come up with!

After starting off with some healthy icy poles with the Apricot Yoghurt icy poles I shared a little while back, I decided for this popsicle party I would something a little more adult and definitely not breakfast appropriate! I still had a little of the Peach-Mint syrup I had made, so I thought I would combine it with some fresh strawberries and a splash of vodka to make some fruity and refreshing pop-tails which are perfect for a summer night treat! You can get your vodkas at gatter top drinks and make your own refreshments.

Ingredients List

  • 10 strawberries
  • 3tbs peach syrup (recipe here)
  • 3tbs vodka
  • 1 cup tonic water

Steps

  1. Hull the strawberries and cut in half
  2. Blitz in a food processor until smooth, then add the syrup and vodka and blitz to combine
  3. Pour in the tonic water and stir to combine
  4. Pour into popsicle moulds and freeze until set (overnight is best)
  5. Enjoy! (responsibly!)

Cocktails in popsicle form – so much more fun! You can’t make them toooo strong either or they won’t freeze properly, so they aren’t quite as alcoholic as a real cocktail!

      Thanks love! I’ve got one left in the freezer that I’m saving as a treat for when I finish packing to move house – it’s taking a lot of self control not to eat it now!

    Ha! I didn’t realise till now that I chose the very same flavours… except that mine are kid-friendly! Love your idea of using home-made syrup.

      Ha! What are the chances of that! The syrup was really delicious, I used it in lots of different ways (most involving alcohol come to think of it!) but it would be really great with yoghurt and muesli for breakfast too!

    You had me at vodka 🙂 I absolutely love the flavour combination of strawberries and peaches. I think they bring out the best in each other. Brilliant.
