Recipe: Vegan Beef Stroganoff

This vegan beef stroganoff is a bit of a different recipe for me. I don’t cook with faux-meat products often, but felt like a hearty, winter warming dinner option and this was a real winner. Simple to whip up, reheats well and perfect for vegans and carnivores alike!

Recipe is slightly tweaked from the Smith and Deli-cious cookbook (which is a seriously great cookbook!)

Ingredients List

  • 1 brown onion
  • 300g mushrooms
  • 60g vegan butter
  • 2tbs olive oil
  • 1tsp caraway seeds
  • 3 cloves garlic
  • 2tbs paprika
  • 1tbs tomato paste
  • 300g vegan beef pieces
  • 1 1/2tbs plain flour
  • 500ml stock
  • 1tbs worcestershire sauce
  • 1tbs red wine vinegar
  • 1tbs wholegrain mustard
  • 125g sour cream (vegan alternative)
  • Salt and pepper
  • Dill

Steps

  1. Slice the onion and mushrooms and set aside
  2. Heat the butter and oil in a large pan over medium heat, then add the onion, mushrooms and caraway seeds. Cook until lightly coloured, stirring occasionally
  3. Mince the garlic and add to the pan, cooking for one minute
  4. Add the paprika and tomato paste, stirring to combine, then add the beef pieces
  5. Add the flour and cook for a minute then add the stock, worcestershire sauce, vinegar and mustard. Stir to combine then simmer for 20 minutes
  6. Stir in the sour cream over a low heat for about 5 minutes
  7. Season with salt and pepper then top with dill to serve

I know it looks like a lot of ingredients for this vegan beef stroganoff, but they are mostly pantry staples. If you just need this to be vegetarian rather than vegan then use whatever butter and sour cream you normally have, but the vegan versions are usually pretty easy to find these days. Serve it up with pasta or rice for an authentic childhood favourite! The recipe book also recommends it as a pie filling, and I think I will have to give that a try soon too!

I stock up on things like these beef chunks when I do a big visit to my local Vietnamese supermarket. They have SO many varieties of faux-meats, and whilst they don’t feature on my meal plan often I do like having them in my freezer to play with. I’ll have to make another visit soon so I can make this vegan beef stroganoff again!

If you haven’t cooked with this kind of ingredient before then I highly recommend this as great place to start. It’s creamy, full of flavour and seriously tasty, so you can’t go wrong!
