Recipe: Vegetable Rolls

As a vegetarian, pies and sausage rolls are unsurprisingly not something I eat very often as it can be hard to find one that holds much appeal. So when I had a strange craving for a veggie-filled pastry lunch recently I knew the only solution was to make some of my own, and the result was these vegetable rolls!

Mass produced vegetable rolls tend to be mushy and bland, so to avoid that I diced my veggies so I could still identify them and I made sure to add lots of herbs and spices to really up the flavour. They turned out really well and I’m sure they will be on regular rotation in my house from now on!

Vegetable Rolls

Don’t be put off by the long list of ingredients, it’s not as scary as it looks! The recipe is adapted from this one I found on Taste

Ingredients List

  • 1 red onion
  • 2 carrots
  • 1 large zucchini
  • 3 ribs celery
  • 1 corn cob
  • 4 cloves garlic
  • 3/4 cup cottage cheese
  • 1 1/2 cups oats
  • 2tbs fresh basil
  • 2tbs fresh flat leaf parsley
  • 1tbs cumin
  • 1tbs turmeric
  • 1tbs chili sauce
  • 2 eggs
  • 4 sheets defrosted puff pastry
  • Sesame seeds

Steps

  1. Preheat oven to 220C
  2. Dice the onion, carrots, zucchini and celery, remove the corn from the cob and crush the garlic.
  3. Combine in a fry pan with a little oil and cook for 5-10 minutes, until the vegetables have started to soften
  4. Place the cooked vegetables in a bowl with the cottage cheese, oats, finely chopped herbs, spices and chilli sauce. Lightly beat the eggs and add half to the mixture and fold all together. Leave to sit for 10 minutes
  5. Halve a puff pastry sheet then spoon the mixture along the long side, brush the opposite side with some of the beaten egg and roll up. Cut into thirds and place on a lined baking tray. Repeat with the remaining puff pastry sheets.
  6. Brush the tops with the remaining egg and sprinkle with sesame seeds then place in the oven to bake for 15-20 minutes, until puffed and golden brown
  7. Enjoy!

Vegetable Rolls

If you’re making these for a party you can always make them in advance, freeze them without baking them and just pop them in the oven to cook when you need them. They’re also delicious cold so make a great alternative to sandwiches in the lunchbox!

You can always mix up the vegetables to whatever you have on hand, potatoes would be an excellent addition too!

    Looks good Liz! What do you think about sour cream instead of cottage cheese – really want to try these with what I already have at home 🙂

      Flavour-wise I think sour cream would be fine but you might find the mixture a little runny as it’s not as thick as cottage cheese. I’d probably just add some more oats to help balance things out and then you should be right!

    they look great liz!
    I could make them with sweet potato,
    spinach and feta and a wholemeal or low gluten pastry … is there such a thing?
    I don’t imbibe often with pastries. I like them but I tend to stay away from processed carbs. cheers m:)X

      Thanks Merilyn! Sweet potato, spinach & feta sounds like a delish combination! I believe you can get gluten free puff pastry, or I spose you could make your own!

    These look super delish! We make something similar in the Thermomix but we use feta instead of cottage cheese. I love the combination of flavours and spices you have used, will definitely have to give these a go!
