Recipe: Vegetarian Laksa

Laksa makes such an excellent warming dinner option but unfortunately most laksa pastes you can buy are not vegetarian friendly (not to mention the added preservatives and the like!) so I set about making my own instead! It’s easy and delicious and can be ready in no time – so here we have it, my vegetarian laksa including homemade laksa paste!

Vegetarian Laksa | I Spy Plum Pie

Ingredients List for Laksa Paste

  • Small white onion
  • 2 stalks lemongrass
  • 3-4 red chillis
  • 3 cloves garlic
  • 3cm galangal
  • 1tsp ground coriander
  • 1tsp paprika
  • 1tsp cumin
  • 1tsp turmeric
  • 1/4 cup cashews
  • 3tsp soy sauce
  • 1tbs sesame oil
  • 2tsp brown sugar
  • Juice of half a lime

Steps for Laksa Paste

  1. Roughly dice the onion, lemongrass, chilli and garlic and place in your food processor (I used my stick blender)
  2. Peel and roughly chop the galangal an add to the processor
  3. Add the remaining ingredients and blitz until it turns into a paste
  4. Store in a jar and use within a week, or freeze to use later

Ingredients List for Vegetarian Laksa

  • Head of broccoli
  • 1 large carrot
  • 100g snow peas
  • 200g fried tofu
  • 1tbs sesame oil
  • 4tbs laksa paste
  • 3 cups vegetable stock
  • Can of coconut milk
  • 1 cup water
  • Rice noodles
  • Bean sprouts
  • Spring onions
  • 1/4 cup mint
  • 1/2 cup coriander
  • Lime

Steps for Vegetarian Laksa

  1. Chop the broccoli into florets and slice the carrot
  2. Trim the ends off the snow peas and cut the larger ones in half
  3. Chop the tofu into cubes
  4. Heat the sesame oil in the base of a large saucepan or wok and then add the laksa paste and then heat until fragrant
  5. Add the stock, coconut milk and water and stir to combine
  6. Add the broccoli and carrot and cook on high until starting to cook through
  7. Meanwhile, cook the noodles according to packet directions
  8. Add the snow peas and tofu to the broth and cook until the tofu is heated through
  9. When ready, divide the noodles into your serving bowls then ladle over the broth and vegetables
  10. Top with bean sprouts then chop the spring onion and herbs and sprinkle on top
  11. Enjoy!

Vegetarian Laksa | I Spy Plum Pie

So I know the ingredients lists look long, but believe me it’s not time consuming or fiddly at all! I often make the paste on a Sunday night so then I can quickly whip up the laksa itself for dinner on a Monday. If you can’t find galangal then you can replace it with ginger, but I tend to be able to pick it up at an Asian grocer most of the time (it looks very similar to ginger, just with more of an orange exterior). Same goes for fried tofu, I pick up a block at my Asian grocer, but you can always just fry your own tofu up if you prefer!
