Recipe: Zucchini & Corn Slice

I never used to like zucchini, I’d turn my nose up when mum served it, and would never think of ordering a zucchini-based dish. How times have changed! Now I use zucchini all the time, and whilst I wouldn’t ever just snack on it as is, I find it such a versatile and easy to use veggie that it is popping up in all kinds of dishes these days! Case in point – a zucchini and corn slice!

Ingredients List

  • 2 zucchini
  • Onion
  • 1 cup cheese
  • 1 cup self-raising flour
  • can of corn
  • ½ cup of oil
  • 5 eggs

Steps

  1. Grate the zucchini and corn
  2. Finely dice the onion
  3. Combine the zucchini, cheese, corn, onion and flour in a bowl
  4. Lightly beat the eggs
  5. Add the oil and eggs to the bowl and mix well
  6. Season with salt and pepper
  7. Pour in a pan and bake for 35-40 minutes, until set
  8. Enjoy hot or cold!

    Hi Liz, I used to turn my nose up at avocado but now I love it. I think the first time I tried avocado it was in a badly prepared guacamole with melted cheese and it turned me right off. Also maybe it was the texture. I’ll certainly be trying this zucchini and corn slice, my kids are fussy eaters but I think they’ll like this one. Thanks Nicole

      That’s funny Nicole because avocado is something I’m still working on – it’s definitely the texture for me! I’m slowly getting better, I can tolerate it in things now but still wouldn’t choose it! I hope your kids like it!

    My mum used to make this slice when I was young, but I’ve never tried to make it myself. Will have to give it a go 🙂 I think zucchini has a funny texture when roasted but it’s good in soups. There’s a place here in Sydney that does some amazing zucchini fries too!

      Zucchini fries! How intriguing! I wonder if they are as good as eggplant fries – I shall have to investigate this further!

    My Mum used to make this when I was younger and after I moved out of home I have to say it was one of those things I never thought I would make for myself! But I still loved going home to Mum’s and seeing it on the table for dinner….and now I make it for my husband and I!

      It’s such an easy meal and lasts for ages too which is always handy! Plus you can always throw in whatever other veggies need using up which is a win in my books!

    Oh my life would be NOTHING without zucchini! It’s my all-time favourite vegetable. I love how the flavour becomes totally something else when it is roasted and caramelised. Your zucchini and corn slice is on my list as of right now. This is YUM STUFF.
