Recipe: Peach Haloumi Salad

The idea for this salad came about when I spotted some gorgeous looking peaches at my local fruit & veggie shop. I wanted to do something with them a bit more special than just eat them straight or pop them on top of my overnight oats, so a peach haloumi salad it was!

Recipe: Summer Vegetable Curry

Curries are one of my favourite meals given they are easy to make in bulk and freeze so there is always something tasty & nutritious ready for me at a moment’s notice. This summer vegetable curry makes the most of the gorgeous produce around at the moment, pairing them with some fresh flavours to really make them shine. It is also ready in no time, making it the perfect mid week meal!

3rd Blogiversary & a Plum Basil Cocktail!

Guess what! Today is my third blogiversary! Yep, on this day three years ago I hit publish on my very first post, and what a ride it has been. I’ve definitely come a loooong way with my photography (and I still have a lot further to go!), that’s for sure! Each year on my blogiversary I like to share a recipe featuring plums and this year I’m right in celebration mode with a plum basil cocktail!

Recipe: Spinach & Cashew Dip

It’s dip time again! I originally made this delicious spinach & cashew dip to take on a picnic, although I’ve since made it a few more times to snack on at work or toss through some pasta as a pesto and every time it has been a real winner. It’s incredibly simple to whip up and is so cheap to make, so you’ve really got no excuse not to give it a try!

Recipe: Artichoke & Cannellini Bean Dip

It’s been a little while since I’ve shared a dip recipe with you lovely folk, but I’m back with an absolute winner today. I spent the shortest day of the year at a Winter Solstice event with some friends (complete with an amazing bonfire!) and we took along a little picnic of snacky foods, and this artichoke & cannellini bean dip was one of my contributions. It’s incredibly simple to make but carries quite the flavour punch, so it’s a definite winner in my books!
