Plus, at the moment it can be tricky to know what fresh produce you are going to get your hands on! This simple beetroot risotto is perfect for that! Plus, it’s pretty and delicious!
For the second of my Christmas lunch recipes I’ve got this oh-so-tasty BBQ pumpkin and beetroot salad for you. It was fresh, delicious and could be prepped in advance which is always a winner when you’re cooking up a feast!
This roast beetroot, apple & haloumi salad really feels like winter on a plate! It’s somehow simultaneously both hearty and fresh, and it sure is delicious. Sure, it takes a little time to make, but it’s mainly hands off and so worth it!
I found some delicious looking pears at my local fruit & veggie shop and decided a salad was in order, and this beetroot pear salad was the result! It’s oh so tasty, easy to whip up and perfect for lunch or as a side at dinner. Yum!
My love of Israeli couscous for salads is well documented here at ISPP, so now that we’ve got some warmer weather it was time to pull it out of the pantry again and get cooking – the result was this beetroot almond israeli couscous salad and it’s a real winner!
