Recipe: Garlic Asian Greens

The recipe for these garlic asian greens is probably the simplest I have ever shared here on I Spy Plum Pie, but they are mighty delicious. I whip them up all the time as a side dish to go with rice and something like grilled tofu, steamed dumplings or the recipe I shared last week, miso eggplant. They take no time at all to whip up and are a tasty way to up your leafy green vegetable uptake.

Recipe: Miso Eggplant

Miso eggplant is one of my go-to dishes to order when I’m at a Japanese restaurant, but it’s also super quick and easy to whip up at home too! It can be ready in just over half an hour and makes a delicious, vegan friendly dinner option served with rice and greens. Miso eggplant is a regular feature on my table, that’s for sure!

Recipe: Crispy Tofu Tacos

I eat a lot of Mexican food over the warmer months but usually fall back on simple black bean tacos but I decided to branch out a little over the weekend and the end result were these crispy tofu tacos! They are full of both flavour and texture and make an excellent mid-week meal when it’s far too hot to turn the oven on. Plus they’re delicious!

Recipe: Chilli Ginger Mushroom Stir Fry

If you’d told me a few years ago I would be happily making recipes that not only include mushrooms but feature them heavily I would never have believed you, but clearly times do change as here I am with a mushroom stir fry for you today! This dish is full of flavour and best of all is ready in no time at all, making it an excellent mid-week meal when time and enthusiasm are low!

Recipe: Vegetarian Laksa

Laksa makes such an excellent warming dinner option but unfortunately most laksa pastes you can buy are not vegetarian friendly (not to mention the added preservatives and the like!) so I set about making my own instead! It’s easy and delicious and can be ready in no time – so here we have it, my vegetarian laksa including homemade laksa paste!
