If you’ve been around these parts for long it’ll come as no surprise that I’m a huge fan of both pumpkin and dips. In fact, the only surprise there is possibly that I haven’t already shared a recipe for a pumpkin dip! We’re coming towards the end of the pumpkin season here in the Southern Hemisphere, but as I’m seeing all our Northern neighbours celebrating the arrival of the vegetable I was very glad to get another pumpkin in my veggie box to play with. I have a big week of work ahead of me with lots of meetings and deadlines, so I knew having something healthy and delicious on hand that I could graze on whenever I got a chance would be vital, so whipped this up to help fuel my week.
Recipe: Sun Dried Tomato Hummus
Every time I make dip I wonder why I ever buy it – it’s so simple, so fast and generally so much tastier when you make it yourself! I’m a big fan of hummus as I find it makes an excellent dip but is equally delicious as a spread in a sandwich so when trying to decide what to make for work this week I decided a variation on hummus was in order. I had seen sun dried tomatoes on special at my local Turkish grocer recently so decided they would do the trick and it turned out deliciously. Smooth and creamy with a nice little kick from the cayenne pepper – perfect!
Recipe: Macadamia and Rocket Dip
This recipe could be called a dip or a pesto as it works just as well as both – have it as part of a platter of crudites and cheeses or on top of a pasta and either way you’ll be laughing. It’s absolutely full of flavour but super simple to make. I used savoury yeast in mine to make it vegan but you could definitely use parmesan instead if you prefer – either work perfectly! The hardest part is decided how to eat it!
Recipe: Baba Ghanoush
I love eggplant. Whenever we go out for dinner I am always drawn to anything on the menu with eggplant in it, particularly if we’re eating japanese. However, I don’t have anywhere near the same success with it at home. In fact, I don’t cook with it all that often, because I’m sick of being somewhat disappointed with the results. If anyone has any suggestions for what I might be doing wrong I’d love to hear them!
Baba ghanoush however is a different story – this is almost impossible to get wrong, so I can get my eggplant hit at home in the form of a delicious dip – win!
Blended fun: Hummus and Juices
As I mentioned earlier in the week, I have a new food processor/juicer/blender toy and I’m loving playing with it, so pretty much everything I cook at the moment has at least one element going through the machine! I’m particularly loving the juicing mechanism, but also whipped up some hummus to snack on at work.
