Recipe: Beetroot Asparagus Salad

I’m so excited that it is finally asparagus season again here in Australia, so much so I’ve been pretty much eating it in every form I can think of – tarts, risotto, salads – you name it! This beetroot asparagus salad is the most recent addition to my asparagus repertoire and it’s my new favourite! Super quick and easy to whip up, it’s the perfect Spring salad!

Recipe: Artichoke & Cannellini Bean Dip

It’s been a little while since I’ve shared a dip recipe with you lovely folk, but I’m back with an absolute winner today. I spent the shortest day of the year at a Winter Solstice event with some friends (complete with an amazing bonfire!) and we took along a little picnic of snacky foods, and this artichoke & cannellini bean dip was one of my contributions. It’s incredibly simple to make but carries quite the flavour punch, so it’s a definite winner in my books!

Recipe: Baked Lemon Cheesecake

Cheesecake isn’t something I make very often, but I had my folks over for dinner recently and my dad had mentioned he wanted a lemon cheesecake so lemon cheesecake for dessert it was! It was much easier than I remembered, you just have to be prepared so you have enough time for it to cool down properly. I decided to go a little fancy and made a balsamic strawberry sauce to pour on top, but it would still be delicious with just a sprinkling of icing sugar.

Recipe: Rosemary & Parsley Cannellini Bean Dip

Another week, another dip here on I Spy Plum Pie! This one is a new favourite here at ISPP HQ as it works equally well served with crudités and crackers, or as a spread to make even the most simple sandwich a whole lot tastier! It makes a nice change from hummus as well! So here we go, my rosemary & parsley cannellini bean dip!

Recipe: Ricotta Stuffed Mini Capsicums

As you may have seen in my January Balcony Garden update I now have a mini capsicum plant which was getting rather laden with gorgeous orange peppers. There was really only one thing to do with them when they ripened – stuff them with cheese! I was even able to flavour them with herbs from my balcony and lemon from my parents, so it really is a homegrown affair! So here they are, my ricotta stuffed mini capsicums!
