Recipe: Roast Pumpkin Risotto

I’m pretty happy that it’s autumn and therefore pumpkin season here in Australia as it’s up there as one of my favourite vegetables. It’s not only delicious but it’s amazingly versatile. I use it in everything – salads, burgers, curries, soup and now a risotto! Recipe: Banana Pancakes

On the morning of my birthday I was treated to a delicious pancake breakfast made by B. I whipped up the batter the night before so we didn’t have to think too much in the morning, and served them up with chopped bananas, strawberries and a little of the salted caramel sauce leftover from my birthday cupcakes! They’ll have to wait until tomorrow though, I’m off to spend the day at the Peninsula Hot Springs with B instead (sorry work!)

It almost wasn’t to be as all of a sudden I struggled to find pomegranates anywhere, but I refused to give up and after visiting five separate fruit & vege shops (which is no mean feat when you walk everywhere!) I finally got my hands on some more of the bright coloured beauties and could whip up this salad! Thankfully it was as delicious as I had hoped and it was definitely worth the effort to find the pomegranate!
