It’s been a while since I have shared a risotto recipe! I recently really felt like risotto for dinner and this roast pumpkin fennel and spinach risotto was the answer. It’s packed with both veggies and flavour and makes for such a delicious dinner. It’s vegan friendly too!
I felt like a fresh, delicious salad for my work lunches recently – my go to really! This roast broccoli cannellini bean salad was the result and I was a very happy camper. Plus, it’s super simple to whip up which is always something I look for!
Roast veggies are one of my favourite things, so it should come as no surprise that I love this herby roast pumpkin. It’s super simple but oh-so-delicious. I’m also always looking for dishes that can be the main event for a dinner party or even Christmas, and I think this might be one of them. Yum!
This sweet potato pickle salad is perfect for a BBQ or potluck dinner and is absolutely bursting with tangy, zesty flavours. It’s simple to whip up, doesn’t require any fancy ingredients and suitable for vegans as well – what more could you want?!
At the moment it seems to be a tie between soups and salads as to what I’m enjoying cooking the most. I love the seemingly endless variety with both of them, with the added bonus that I can whip up a big batch that will see me through most of the working week for lunches. This salad came about after wanting to roast some cauliflower and the combination of cumin-coated cauliflower with a tahini-lemon dressing seemed too good not to try! Luckily, it turned out as delicious as I hoped and proved to be a hearty salad to get me through the afternoon at work.
