Recipe: Berry Mint Icy Poles

Phew, we’ve made it to the last Meatless Monday linkup for the year! I can’t wait to see what you’ve all been cooking in the lead-up to Christmas!

With Summer upon us again it was definitely time to pull out the ol’ icy pole moulds and get creating. For me it’s hard to beat berries as the perfect summer treat (although pineapple comes in a very close second!) and with my mint plant going berserk on my balcony I decided a combination of the two was in order. Recipe: Strawberry & Coconut Spelt Muffins

I haven’t done much baking in recent times but when I got an itch to make some muffins I decided to at least try and make them a little on the healthier side. After starting off with some healthy icy poles with the Apricot Yoghurt icy poles I shared a little while back, I decided for this popsicle party I would something a little more adult and definitely not breakfast appropriate! I still had a little of the Peach-Mint syrup I had made, so I thought I would combine it with some fresh strawberries and a splash of vodka to make some fruity and refreshing pop-tails which are perfect for a summer night treat! You can get your vodkas at gatter top drinks and make your own refreshments.

Kiwifruit Smoothies

The other weekend I came across some rather ripe kiwifruit hiding out in the bottom of my fruit bowl and realised drastic action was needed to ensure they didn’t go to waste. I thought about making a cheesecake or pavlova to use them all on, but given I wasn’t planning on doing any entertaining that weekend (and definitely didn’t need to eat a whole cheesecake myself!) I thought that probably wasn’t the best idea. So, I decided I would use them as the basis of my smoothies for the next few days and see what flavour combos I could come up with!
