Recipe: Roast Zucchini, Sweet Potato & Chickpea Salad

Melbourne has embraced December as only Melbourne can – with a mixture of super warm days and then some well, not so summery days. I took advantage of one of the cooler days to turn on the oven and whip up this salad, which I then proceeded to eat for dinner for the next few warm days when cooking something warm was the furthest from what I wanted to be doing!

Recipe: Black Bean Tacos

Mexican food is a big favourite of mine and B’s, it’s so easy to whip up, full of flavour and you can use pretty much anything you have on hand. I had been sick and had pretty much no appetite for almost a week (the worst kind of sickness for someone like me!) so had a fridge full of veggies that needed using, so into the mix they all went! I’ve become a big fan of black beans recently as well, although sometimes it’s tricky to find cans of them, but worth the effort when you do locate them! I went cheese-less when making these, opting to go more heavy handed on the avocado instead, but obviously you can cheese them up if you so desire!

How To: Roasted and Marinated Vegetables

I forgot to cancel my veggie box before I went to Queensland so found myself with a fridge full of amazing organic vegetables and not much time to eat them all. I didn’t want any to go to waste so cooked up and froze what I could and then decided that I would roast and marinate the zucchini, eggplant and tomatoes to store in the fridge until I got back. It worked really well and I have been using them in simple pasta dishes, in sandwiches and as part of a cheese platter since. Such a great way to prolong the life of your vegetables!
