I forgot to cancel my veggie box before I went to Queensland so found myself with a fridge full of amazing organic vegetables and not much time to eat them all. I didn’t want any to go to waste so cooked up and froze what I could and then decided that I would roast and marinate the zucchini, eggplant and tomatoes to store in the fridge until I got back. It worked really well and I have been using them in simple pasta dishes, in sandwiches and as part of a cheese platter since. Such a great way to prolong the life of your vegetables!
The beauty of this salad is in its simplicity. It relies on the flavours of the fresh produce, brought together with a tangy lemon dressing. It looks much fancier than it really should given it takes mere minutes to pull together. I highly recommend it as a side at a BBQ, or as a quick and easy mid-week salad served with some protein of some kind (a poached egg works perfectly!). You can prepare it all ahead of time, just store the ribboned zucchini in a sealed container in the fridge and add the dressing when you are ready to serve. Easy as that!
I never used to like zucchini, I’d turn my nose up when mum served it, and would never think of ordering a zucchini-based dish. How times have changed! Now I use zucchini all the time, and whilst I wouldn’t ever just snack on it as is, I find it such a versatile and easy to use veggie that it is popping up in all kinds of dishes these days! Case in point – a zucchini and corn slice!
