Recipe: Quinoa Stuffed Capsicums

Every time I see a recipe for a stuffed food – be it capsicum, zucchini or tomato I always think I should give it a try but for some reason it just never happened. So, when I got a couple of green capsicums in my organic veggie box I decided to stop thinking and start doing. And boy am I glad I did – these were tasty! I think they would be particularly great for a dinner party as they look pretty impressive, and you can do most of the work in advance and just pop them in the oven when you need them. Perfect!

DIY Magnum Ice Cream Cake

Today’s post is less of a recipe, and more of a how-to! I live in a share house with three other people and the two boys have a slight obsession with magnum ice creams. Every Monday night before we settle in for a family viewing of Q&A they have a little competition (usually an arm wrestle or rock-paper-scissors!) to decide whose turn it is to go and get the magnums. This week however, it was one of the boys birthdays so I decided to make my own version of a magnum for them instead – and giant sized at that! It turned out better than expected so I thought I’d share it with you!

Recipe: Chunky Choc-Chip Cookies

As much as I do love fancy, intricate foods sometimes all you need is a simple cookie. These chunky choc-chip cookies are so easy to whip up, take only 15 minutes in the oven and are a hit with everyone I have ever made them for. They go perfectly with a cup of tea, so are ideal if people come round unexpectedly as you can have them ready to eat in no time. They may not be the prettiest cookies you’ll ever see, but I’m okay with that if you are!
