I’ve been talking a lot about bulk cooking lately so today I thought I would share some of my favourite freezer friendly vegetarian meals! I’d love to hear your favourites as well!
Curries, Stews & Casseroles
Tomato based dishes freeze better than coconut-milk based ones, but you can freeze them as well. I usually have a few serves of a curry or two, a chickpea stew and maybe even a broccoli casserole in my freezer at any one time. Some of my go-to recipes include:
- Potato & Pea Curry
- Sweet Potato & Chickpea Stew
- Brown RIce & Broccoli Casserole
- Pumpkin & Chickpea Curry
Mexican Foods
Mexican cuisine freezes particularly well and is oh-so-easy to make vegetarian friendly. Enchiladas, chilli, burritos, taco fillings – they can all be made in advance and pop in the freezer for when you need them. Try these recipes to start you off!

Pasta
Pasta bake, lasagna, stuffed pasta shells – you name it, pasta freezes well! Plus, it’s cheap, easy and delicious! Here’s a few recipes to try out!

Burgers
Sometimes you want a meal fast, but you don’t necessarily want something heavy, carb-loaded or cheesy and that’s where burger patties come in! They freeze and reheat really well and can make a light, fresh dinner in no time (with or without the bread!)
Soup
Soups are a rather obvious freezer meal but that’s for good reason! Plus, if you go for a heartier option then they can be a complete meal, or paired with some crunchy toast! I went through quite the soup phase a while ago so there’s lots of recipes on the blog, but here are a few of my go-tos!
