Recipe: Apple Loaf

Homemade baked treats are so good for the spirit, so I’ve been doing quite a bit of baking in lately! Thankfully I have a willing group of workmates who are always more than happy to help polish off anything I have whipped up, saving me from having to eat it all myself! This apple loaf was a firm favourite, perfect with a mid-morning cuppa and an excellent pick-me-up treat.

Layering the apple through the middle of the loaf as well as on top makes for an incredibly soft and moist treat, although maybe not the most structurally sound one! Lucky I have such cute little cake forks to eat it with!

Ingredients List

  • 1 large apple
  • 1/2 cup butter
  • 2/3 cup caster sugar
  • 2 eggs
  • 1 1/2tsp vanilla essence
  • 1 1/2 cups plain flour
  • 1 1/2tsp baking powder
  • 1/2 cup milk
  • 2/3 cup brown sugar
  • 3tsp ground cinnamon
  • 1/4 cup walnuts

Steps

  1. Preheat oven to 175C
  2. Peel and finely chop the apple and set aside
  3. Beat the butter and caster sugar until creamy then add the eggs one at a time, beating well between additions
  4. Add the vanilla and beat until well combined
  5. Fold in the flour and baking powder then add the milk and gently fold together
  6. Pour half the batter into a lined loaf tin then top with half the apple
  7. In a small bowl combine the brown sugar and cinnamon and sprinkle half over the apple in the tin. Press down gently with the back of a spoon
  8. Pour the rest of the batter on top, then top with the remaining apple and brown sugar mix.
  9. Finely chop the walnuts and sprinkle on top, gently pressing down with a spoon again
  10. Bake for 45-50 minutes, until cooked through, then cool in the pan for 5 minutes before placing on a wire rack to continue cooling
  11. Enjoy!

I love that the topping means it comes out looking rather rustic, that’s definitely my kind of food (or at least I tell myself that to hide the fact I’m not the neatest cook!). The brown sugar and cinnamon mix provides a deliciously addition to the otherwise simple loaf, and the walnuts on top add a little bit of crunch which I’m always a fan of. Best part is you do almost all of it in own bowl, so clean-up is minimal!

    YUM! This is going straight on my ‘to make’ list. I do the same – most of my cooking makes end up at the office…thank goodness for hungry work pals!

      Aren’t the forks great! I was given them about 8 or 9 years ago and my mum always tries to steal them off me! Baking seems to be a universal mood lifter doesn’t it!
