Recipe: Banana Choc-Chip Muffins

After being away last weekend I found myself with a pile of bananas that had somehow been overlooked so jumped into action and whipped up some banana choc-chip muffins to nibble on. Simple, easy and full of flavour – perfect for a mid-morning snack with a cup of tea!

Ingredients List

  • 4 small/2 large overripe bananas
  • 50g butter
  • 2 eggs
  • 1/2 cup milk (I used almond, but whatever you use is fine)
  • 1 3/4 cups self-raising flour
  • 1/4 cup wholemeal flour
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 2/3 cup brown sugar
  • 1/2 to 2/3 cup choc chips

Steps

  1. Preheat the oven to 180 C
  2. Melt the butter and set aside to cool
  3. Mash the bananas in a bowl
  4. Add the milk, butter and lightly whisked eggs and mix together well
  5. In a second bowl, add the flours, sugar, cinnamon, nutmeg and ginger
  6. Pour the wet ingredients into the dry and fold together well
  7. Fold through the choc chips (I crushed mine into pieces as they were large choc-chips)
  8. Spoon into muffin pans and bake for 20 minutes
  9. Enjoy!

    I’ve just had to cook up some old bananas, I made my regular old banana bread but the choc chip and banana muffin sounds like a very tempting combination.
