Recipe: Beetroot Haloumi Salad

After sharing my current favourite dukkah recipe with you last week, today I thought I’d share a salad I’ve been using it on – my beetroot haloumi salad! This salad is super colourful (and delicious!) making it perfect for a BBQ or even part of your Christmas spread. Plus, it features haloumi so how could you possibly go wrong!

Beetroot Haloumi Salad | I Spy Plum Pie

Ingredients List

  • 1 cup Israeli couscous
  • 1 1/2 cups vegetable stock
  • 1/4 cup olive oil
  • 400g haloumi
  • 250g roast baby beetroot
  • Zest and juice of a lemon
  • 1/3 cup dill
  • 1/4 cup dukkah

Steps

  1. Combine the couscous with vegetable stock in a saucepan and bring to the boil, then reduce to a simmer and cover for 10 minutes, or until al dente.
  2. Drain and rinse then drizzle with olive oil and set aside
  3. Slice the haloumi into batons and then grill in a fry pan until cooked on both sides
  4. Squeeze over the juice of the lemon
  5. Slice the roast baby beetroot and combine with the couscous and haloumi in your serving dish
  6. Sprinkle with lemon zest, finely chopped dill and dukkah
  7. Enjoy!

If you’ve got the time then roasting your own baby beetroot is an excellent option, but I do sometimes use the pre-roasted options you can get (just be sure they don’t have any nasty additives, and remember you can recycle the packaging at the supermarket). Everything still gets tinged pink, but it is a slightly less messy version than roasting it yourself! This time I used a packet of Love Beets that was sent to me, which is my usual go-to for pre-roasted beetroot anyway!

I love the combination of textures and flavours in this salad – sweet beetroot, salty haloumi, spicy and crunchy dukkah – it really does have it all! By now my love of israeli couscous as a salad base is pretty well documented round these parts, and this is another example of why I love it so much. It’s versatile, bulks out salads without making them feel heavy and is quick and easy to prepare. Plus it’s delicious!

I think this salad will be on rather high rotation in my kitchen over the warmer months!
